The flock is raised in the wilderness on certified organic meadows as long as the seasons allow.
The Barn shelter provides the flock with protection and comfort during cold or rainy times of the year.
A certified organic crop regime perfectly fits the production gears: the fodder during wintertime, the straw for bedding and the cereals for animals’ supplementing in stables derive from indoor company’s production.
That’s not all: Cau&Spada is also a conferring member of the regional organic durum wheat supply chain.
There are two essential aspects that define our production:
Seasonality: it’s well-known that every season has its own fruits. Similarly, cheese is related to time and to the biodiversity that organic grazing lands offer, permitting to take advantage of the nutraceuticals that are fundamental for the nutritional properties of cheese.
